CAJUN SHRIMP WITH MANGO KEBABS
16 extra large shrimp (16-20 count), peeled, except for tail
vegetable oil spray
1 large ripe mango, cut into 3/4-inch cubes
2 tablespoons Cajun spice mix (recipe follows)
4 long metal or presoaked bamboo skewers
FOR SERVING:
fresh spinach leaves or lettuce
lemon wedges
Spread all the shrimp in a dish and spray lightly with vegetable oil on both sides. Sprinkle shrimp generously or roll them in the Cajun spice mixture to ensure that both sides are fully coated.
Thread 4 shrimps alternating with mango cubes onto each skewer or thread mango cubes inside the curve of each shrimp.
Grill over medium heat for about 2-3 minutes per side or until cooked, turning once.
Serve as appetizer over fresh spinach leaves or lettuce, garnished with lemon wedges.
CAJUN SPICE MIX
Makes 1/2 cup
1 tablespoon paprika
1 teaspoon cayenne powder
1 teaspoon ground cumin
1 teaspoon onion powder
1 teaspoon ground black pepper
1 teaspoon ground white pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon salt
Mix together all the above ingredients. Store in an airtight jar.
Makes 4 servings
