Recipe: Shrimp Delicious (with stewed tomatoes, chile peppers, and sherry)

3/4 pound raw, peeled, deveined shrimp, fresh or frozen
1/4 cup all-purpose flour
1 clove garlic, minced
3/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup cooking oil
1 (16 ounces) can stewed tomatoes
1/2 cup chopped green chili peppers
1/4 cup dry sherry
1 1/2 cups hot cooked rice (for serving)
Parsley (for garnish)
Thaw shrimp if frozen.
Combine flour, garlic, salt, and pepper. Roll shrimp in flour mixture.
Heat oil in electric frypan to 350 degrees F.
Fry shrimp until lightly browned.
Add tomatoes, chili peppers, and sherry; heat thoroughly, stirring occasionally.
Serve over hot, cooked rice. Garnish with parsley.
Makes 4 servings
