Recipe: Cakes Using Mashed Potatoes - German Potato Cake, Irish Potato Cake, Hummingbird Cake, Chocolate Cake with Butterscotch Topping, Salem Sugar Cake

hi! i haven't seen the site you are talking about, but here are some recipes for cakes with potatoes. enjoy and let us know if you ever find that site again!

GERMAN POTATO CAKE

1 cup mashed potatoes
2 cups sugar
4 eggs
2 tsp. baking powder
1 tsp. cinnamon
1 cup ground cocoa
2 cups flour
1/2 cup milk
1 cup shortening
1 tsp. nutmeg
2 tsp. cloves
1 cup walnuts
1/2 tsp. salt

Cream shortening and sugar together. Add eggs and mix well. Beat milk and cocoa together until smooth, then add dry ingredients to sugar, shortening and egg mixture. Mix in mashed potatoes. Add nuts and bake at 350 degrees for 1 hour.

IRISH POTATO CAKE

3/4 cup butter or margarine
2 cups white sugar
4 eggs
2 cups sifted self rising flour
1 tsp. cinnamon
3/4 tsp. allspice
1 tsp. nutmeg
1/2 cup milk
1 cup mashed potatoes
1 cup seedless raisins
1 cup English walnuts or pecans, coarsely chopped
1 tsp. vanilla

Cream butter until soft and smooth. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating thoroughly after each addition. Sift together flour and spices. Add alternately with milk to butter mixture, beating until smooth after each addition (do not over beat). Stir in potatoes, raisins, nuts and vanilla until evenly blended. Pour into four greased 9" cake pans. Bake at 350 degrees for about 25 minutes or until done. Cool. Spread a thin layer of your favorite chocolate or lemon icing between each layer and on the top and sides of cake. NOTE: Instant mashed potatoes work well in this recipe.

HUMMINGBIRD CAKE

3 cups all-purpose flour
2 cups sugar
1 1/2 tsp. vanilla
1 1/2 cups oil (I use 1/2 oil and 1/2 butter)
2 cups mashed potatoes
3 eggs
1 tsp. salt
1 tsp. baking soda
3 tbsp. cinnamon (can use more)
1/2 c. nuts (either pecans or walnuts)
1 (8 oz.) can crushed pineapple (not drained)

CREAM CHEESE FROSTING:
8 oz. softened cream cheese
1 stick butter
1 lb. box confectioners sugar
1 tsp. vanilla

Mix all ingredients together (dump everything in bowl) by hand. Bake in a greased and floured tube or large Bundt pan at 300 degrees for 1 hour 30 minutes. Cake will crack slightly on top. Cool for 1 hour in pan before removing. Cream butter and cheese; add sugar and vanilla. Mix until smooth.

CHOCOLATE CAKE WITH BUTTERSCOTCH TOPPING

3/4 cup dry instant mashed potatoes
3/4 cup hot water
2 cups flour (all-purpose)
2 cups sugar
1 tsp. salt
3/4 tsp. baking soda
1 cup shortening
4 eggs
2/3 cup buttermilk
2 tsp. vanilla
3 oz. melted unsweetened chocolate (cool)
9 x 13 x 2 inch pan

BUTTERSCOTCH TOPPING:
1 cup dry instant mashed potatoes
2/3 cup packed brown sugar
1/2 cup shredded or flaked coconut
1/2 cup chopped nuts
1/2 cup margarine, softened
1/4 cup half & half

Grease and flour pan. Heat oven to 350 degrees. Place potatoes in large bowl and pour hot water over potatoes. Let stand until water is absorbed. Add remaining ingredients. Beat on low speed until blended (30 seconds), scraping bowl constantly. Beat on 2 minutes at medium speed, scraping bowl occasionally. Pour into pan. Bake until cake springs back when touched lightly in center, 45 to 50 minutes. Mix potatoes, brown sugar, coconut, nuts, and margarine. Stir in half and half.

SALEM SUGAR CAKE

1 cup mashed potatoes
1 yeast cake
1 cup white sugar
3/4 cup butter and lard mixed
1 tsp. salt
2 eggs
Plain flour, enough for soft dough, about 4 cups
Brown sugar
Cinnamon
Evaporated milk

Add to the hot mashed potatoes the sugar, butter and lard and salt. Dissolve yeast cake in 1/2 cup of lukewarm water, add to mixture. Set aside for half hour until spongy. Add beaten eggs. Add flour to form a soft dough. Let rise overnight, or for about five hours. Pour out and spread on flat pans. When light, make holes for bits of butter; cover top with brown sugar and cinnamon. Bake about twenty minutes in a 375 degree oven. About halfway into baking, sprinkle over the top evaporated milk; this will make the top soft instead of crusty. Bake in 2 pans 13x9x2 inches, lightly greased. Or 1 pan 17x12x1 inch.
