Recipe: California Sweet Onion Salad

Salads - Assorted
California Sweet Onion Salad

2 sweet onions, peeled and diced
2 fresh tomatoes (large), peeled and diced
4 tomatillos, minced
2 Serrano chiles, minced
3 cloves garlic, minced
1/2 cup fresh parsley, finely chopped
1/2 cup fresh cilantro, finely chopped
4 limes, juice only
3 cups cooked black beans
1 tsp coarse salt
1/4 tsp pepper
1 tsp cumin seed, toasted

Combine all ingredients in a large bowl. Cover and chill at least 30 minutes to blend flavors. If preparing ahead, cover and refrigerate up to 1 week.

Makes 4 servings
