Recipe: Roasted Fresh Cut Carrots with Onion and Parsley

Roasted Fresh Cut Carrots with Onion and Parsley

5 lbs. carrots, fresh cut
3 cups onion, cut in half and thinly sliced lengthwise
3 tbsp vegetable oil
2 1/2 tbsp parsley, chopped
1 tsp salt
1 tsp pepper

Toss carrots and onion with oil. Roast in the oven at 450 degrees, stirring occasionally, until carrots are lightly brown and just tender, about 20 minutes, depending on size of carrots. Remove from heat; stir in remaining ingredients.

Makes 24 servings
