Recipe: Potato Lasagna

Potato Lasagna

3 cups sliced potatoes*
1 egg
1 cup cottage cheese
1 cup ready-made spaghetti sauce
4 oz shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 tsp oregano

In a medium mixing bowl, combine all ingredients except the sliced potatoes.

Using a greased 2 quart baking dish, alternately layer the potatoes and the sauce mixture (starting with the potatoes). Very lightly dust with salt, pepper and oregano.

Cover and bake for 40 minutes at 400 degrees.

Uncover and bake for 15-20 minutes or until golden brown.

Hint: Add a small amount of cooked, ground beef or chicken to make it a little heartier.

*The potatoes can also be parboiled beforehand to decrease the baking time.

Makes 4 hearty servings or 6 medium servings
