Recipe: Sweet and Sour Beets

Sweet and Sour Beets

1 can (16 oz) beets, sliced
3 tbsp sugar
grated peel and juice of 1 lemon
1/2 tsp caraway seed
1/4 tsp salt
1/8 tsp ground cloves
2 tbsp cold water
1 tbsp cornstarch

Drain the liquid from the beets into a saucepan, reserving beets. Add sugar, lemon juice, caraway seed, salt, and cloves; bring to a boil. Reduce heat and simmer for a few minutes to blend the flavors.

Gradually blend the water into the cornstarch; add to hot liquid. Cook over medium heat, stirring until thickened. Add beets and lemon peel and heat.

Makes 4 (1/2 cup) servings
