We have this every St. Patrick's Day and it is just delicious. Here is our recipe for Colcannon. For extra fun, you can wrap a ring, a coin, a thimble and a button in parchment and place them in the serving bowl. Finding the ring means marriage within the year for the person who found it, the coin means wealth, the thimble means spinsterhood and the button means bachelorhood.
1 pound kale, cooked and chopped
1 pound of potatoes, cooked
1 onion, chopped
1 ounce drippping per pound of vegetables
salt and pepper
milk if necessary
melted butter
Mash the potatoes or pass them through a food mill.
Chop the kale and add it to the potatoes.
Peel and chop the onion and cook in the drippings until soft. Remove and mix with theh potato and cabbage. Season to taste, and stir in a little milk if the mixture is too stiff. Place in a large casserole and keep warm.
In the meantime, melt 1/2 to 1 stick of butter, depending on taste. Poke the wrapped prizes down in the colcannon. Make a well in the center and pour in the melted butter.
