Recipe: Can't-Be-Beaten Popovers (Wondra Flour recipe, 1960's)

CAN'T-BE-BEATEN POPOVERS

"Unbeatable - in more ways then one! Just stir the ingredients with a fork (no more rotary beater), bake and serve ... delicious filled with creamed sea food or meat!"

2 eggs
1 cup milk
1 cup Gold Medal Wondra Flour
1/2 tsp. salt

Heat oven to 425 degrees F (hot). Heavily grease 6 deep custard cups* or 8 muffin cups.

Beat eggs slightly; add milk, Wondra and salt. Stir with fork just until smooth. DO NOT OVERBEAT. Fill greased custard cups 1/2 full or muffin cups 3/4 full.

Bake 40-45 minutes, or until deep golden brown. Remove from cups immediately and serve.

*Deep glass cups make higher popovers that are easier to remove after baking.

Makes 6 to 8 popovers
