ROASTED PUMPKIN
2 cups coarsely chopped pumpkin*
1 medium onion, sliced
2 cloves garlic, minced
1 Tbsp. fresh rosemary, minced
Salt and pepper to taste
4 Tbsp. unsalted butter, melted
Heat oven to 400 degrees F.
Toss together pumpkin, onion, garlic and rosemary. Place in casserole dish; sprinkle with salt, pepper and melted butter.
Roast 40 minutes or until pumpkin is tender.
*Pumpkin may be cut in cubes, tossed with the remaining ingredients and roasted in a single layer on an oiled baking sheet.
Makes 8 servings
