Recipe: Carnation Whipped Angel Food Pie (Carnation Evaporated Milk can label, 1960's)

1 (3 oz.) package lemon gelatin
1/2 cup sugar
2/3 cup hot water
1/3 cup hot lemon juice
1 teaspoon grated lemon rind
1 cup Carnation Evaporated milk
Add 2 tablespoons lemon juice
1 (9-inch) Nabisco Graham Cracker Pie Shell (recipe follows)
Dissolve gelatin and sugar in 2/3 cup hot water and hot lemon juice. Chill until syrupy.
Add lemon rind.
Chill undiluted evaporated milk in refrigerator tray (in freezer) until soft ice crystals form around the edges of tray (15-20 minutes).
Whip the chilled evaporated milk until stiff (1 minute). Add 2 tablespoons lemon juice, whip very stiff (2 minutes).
Fold whipped Carnation into gelatin mixture. Spoon into prepared pie shell. Chill until firm (1-2 hours).
NABISCO GRAHAM PIE PIE SHELL:
Blend 1 inner-sealed packet of Nabisco Sugar Honey Graham Crackers (finely rolled) with 1/4 cup softened butter and 1/4 cup sugar. Press firmly on bottom and sides of 9-inch pie plate. Bake 7 minutes in moderate oven (375 degrees F). Cool.
Makes 1 (9-inch) pie
