Recipe: Carob sponge cake

Nalani, Thanks for the biscuit recipe, sure sounds interesting, no sugar, no eggs. Quick and easy to make and cheap too. Great my kind of recipe. Will make them too. (one day) ha ha ha !! Honest injun.
This is not a chocolate cake as I said, but rather a Carob cake. I have never tried carob, but it is supposed to taste like chocolate but be better for you. This recipe comes from the El Molino cookbook. Enjoy, Angel.

CAROB SPONGE CAKE:

preheat oven to 300*F (*)

Ingredients
8 large eggs, separated
1 cup Carob powder
1/4 teaspoon oil of peppermint

Method:
Beat whites of eggs until stiff.
Flavour to taste with oil of peppermint.
Beat egg yolks and fold into the egg whites.
Fold in the sifted Carob powder.
Bake for 45 minutes.

* Caution: Do not exceed the recommended baking temperature.
Finely chopped or slivered nuts may be added.

Nalani, the book does not give any indication of how much nuts, I guess this would be by 'feel'.
