Sorry, I don't have a tried & true recipe. Searching online comes up with a lot of different variations, using everything from skim milk to cream!
Basic method is to grate the carrots, then cook with milk and/or cream, sugar, and cardamom (several pods or a little powder) until the carrots are tender and almost dry. Some recipes then stir-fry the cooked carrot mixture in oil or butter until glossy. You can stir in nuts, coconut, raisins, etc. at the end.
