KATHY'S CHAMPION RUM GLAZED RAISIN BARS
(County Fair Winner)
3 tablespoons rum, divided use
1/2 cup raisins
6 tablespoons white granulated sugar
1/2 cup butter, softened
1 egg
1 cup flour
1/2 teaspoon baking powder
1/4 cup milk
FOR THE GLAZE:
1/2 cup powdered sugar
2 tablespoons butter, melted
In a small bowl, pour 2 tablespoons rum over raisins; set aside.
Combine granulated sugar, 1/2 cup butter and egg; beat until creamy.
Sift together flour and baking powder; gradually beat into creamed mixture alternately with milk. Fold in rum-raisin mixture. Spread evenly into 9-inch square greased and floured baking pan.
Bake at 350 degrees F for 25 to 30 minutes.
MEANWHILE, TO MAKE THE GLAZE:
While bars are baking, combine the remaining 1 tablespoon rum, powdered sugar and melted butter.
When bars are done, let them cool slightly and spread glazeover top.
