ORANGE COCONUT CAKE
1/3 cup butter
1/3 cup shortening
1 1/2 cups sugar
2 teaspoons grated orange rind
3 eggs
2 1/2 cups sifted cake flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup orange juice
1 can (3 1/2 ounces) flaked coconut
1 orange, sectioned
Orange Filling (recipe follows)
Seven Minute Frosting (click here for recipe)
Cream together butter, shortening, sugar and orange rind. Add eggs, one at a time, beating well after each addition,
Sift dry ingredients together. Beginning and ending with flour mixture, add alternately to creamed mixture with orange juice. Turn batter into 2 greased and lined 9-inch round cake pans.
Bake in a moderate oven (350 degrees F) 25 minutes. Cool.
Fill layers with Orange Filling and frost top and sides with Seven-Minute Frosting. Sprinkle top and sides with coconut. Place orange sections pinwheel fashion in center of cake.

Mix sugar and flour in saucepan. Add orange juice and egg yolks. Place over medium heat and bring to a boil, stirring constantly. Cook one minute. Add butter and stir well. Cool before using.
Makes one (9-inch) layer cake
