Recipe(tried): Cheesy Broccoli Strata

Side Dishes - Vegetables
This recipe makes a side dish for two or a main dish for one. I took a dish which is made for 6 and decreased everything.

Cheesy Broccoli Strata

1 slice of bread
2 eggs
1/2 cup of 2% milk
pinch each of dried basil,salt, pepper
& red pepper (if liked)
1/4 cup grated mozarella
2tsp olive oil
some minced garlic to taste
small onion, diced
1 cup frozen cut broccoli
small tomato, dicedLightly butter a small baking dish. LIne bottom with the slice of bread, trimming to fit.

In a bowl whisk eggs, milk and spices. Mix in grated cheese and set aside.

Heat olive oil and saute garlic and onions till golden. Add frozen Broccoli and saute for a further 5 mins. Remove from heat and stir in diced tomatoes. Spoon veggies over bread. Pour egg mixture over veggies.

Bake at 375 F for 25 mins or until centre is set.
