Chicken and Mushrooms
1 cup regular long-grain rice
2 whole large chicken breasts
2 tbsp. Soy sauce
2 tbsp. cooking or dry sherry
2 tsp. cornstarch
1/4 tsp. ground ginger
1/4 tsp. garlic paste
1/4 tsp. sugar
400 gms. mushrooms (thinly sliced)
4 green onions (3 inch pieces)
1/2 cup salad oil
1 cup frozen peas (thawed)
1) Prepare rice as usual
2) Meanwhile, cut each chicken breast lengthwise in half; remove skin and bones. Then, with knife held in slanting position, almost parallel to the cutting surface, slice across width of each half into 1/8 -inch-thick slices. Mix chicken, soy sauce, sherry, cornstarch. ginger, garlic and sugar; set aside(to marinade)
3) In 1/4 cup hot salad oil, over medium-high heat; cook mushrooms and green onions( about 2 minutes).Spoon them from dish. In left over oil add remaining salad oil, cook chicken mixture(about 2-3 minutes).Return mushroom mixture to it, add peas; heat through. Serve with rice.
(Cooking time less than 10 minutes)
