DEL MONTE SKILLET CHICKEN PARMESAN
4 skinless, boneless chicken breast halves
1 Tbsp. olive oil
1 (14 1/2 oz.) can Del Monte Diced Tomatoes with Basil, Garlic & Oregano
1 (8 oz.) can Del Monte Tomato Sauce
Shredded Parmesan cheese
hot cooked pasta (to serve, optional)
Cook chicken in oil in skillet over medium-high heat, about 5 minutes per side. Season to taste with salt and pepper, if desired.
Add undrained tomatoes and tomato sauce; cook, stirring occasionally, about 5 minutes or until chicken is done and no longer pink in center.
Slice chicken, if desired. Top with cheese and serve with pasta, if desired.
VARIATIONS:
- To reduce sodium, use DEL MONTE No Salt Added Diced Tomatoes in place of the Diced Tomatoes with Basil, Garlic & Oregano. Just add some minced garlic, dried basil and oregano, to taste.
- Add a (14 1/2 oz.) can of Del Monte Zucchini in Tomato Sauce in place of the Tomato Sauce.
- For a zesty version, add 1/4 to 1/2 tsp. (to taste) red pepper flakes.
