Chicken Breasts in Phyllo

1 1/2 cups mayonnaise
1 cup green onion, chopped
1/3 cup lemon juice
2 cloves garlic, minced
2 tsp. tarragon
12 chicken breast halves, boned & skinned
24 sheets phyllo dough
1 1/3 cups butter, melted
1/3 cup parmesan cheese, freshly grated
Preheat oven 375F.
Combine the mayonnaise, green onion, lemon juice, garlic and tarragon. Sprinkle the chicken pieces with salt and pepper.
Place a sheet of phyllo on working surface. Brush with melted butter (about 2 tsp.). Spread about 1 1/2 tbsp. of sauce on each side of a chicken breast (3 tbsp. in all). Place breast in one corner of buttered phyllo sheets. Fold corner over breast, then fold sides over and roll breast up in the sheets to form a package. Place in an ungreased baking dish. Repeat with remaining breasts and phyllo sheets.
Brush packets with remaining butter and sprinkle with Parmesan cheese. Bake for 20-25 minutes, or until golden. Serve hot.
