This recipe is a real winner as an elegant appetizer or a potluck take-along. I got the basic recipe from either Woman's Day or Family Circle magazine MANY years ago, but it has undergone several changes since then.
Chicken in Phyllo Pastry
2 dozen
(Marinate overnight.)
3 tablespoons lemon juice
2 tablespoons olive oil
1 teaspoon minced garlic
1 teaspoon oregano
4 skinless, boneless chicken breast halves, cut in 1/2" cubes
1/2 pound phyllo pastry, thawed
1/4 pound unsalted butter, melted
Combine lemon juice, olive oil, garlic, and oregano. Toss with chicken and marinate, covered and refrigerated, overnight.
Preheat oven to 400F.
With a scissors, cut stack of phyllo pastry in half lengthwise, making two long strips. Working with one sheet of pastry at a time and keeping the rest covered, fold a sheet in half crosswise and brush with butter.
Place a few pieces of chicken at the short end. Roll up pastry once to cover chicken, then fold in both sides and continue rolling to make a neat package. Brush with butter. Arrange seam side down on a baking sheet. Repeat with remaining packets.
Bake 20-25 minutes, until golden. Serve hot or at room temperature.
