Recipe: Chicken Cacciatore in 20 Minutes (Minute Rice recipe)

CHICKEN CACCIATORE IN 20 MINUTES

1 lb. boneless chicken strips or chicken tenders
1/2 cup chopped onion
1 garlic clove, minced*
2 tbsp. oil
1 (28 oz.) can tomatoes*
1 (8 oz.) can tomato sauce*
1 tsp. salt*
1/2 tsp. oregano
1/2 tsp. basil
1/8 tsp. ground red cayenne pepper*
1 cup green pepper strips
1 1/2 cups Minute Rice, uncooked

Brown chicken, onion and garlic in oil.

Add tomatoes, tomato sauce, seasonings and green pepper. Bring to a full boil.

Stir in rice. Cover, remove from heat. Let stand 5 minutes. Stir before serving.

*One (16 oz.) jar spaghetti sauce and 1 1/4 cups water may be used in place of the ingredients with an asterisk.

Makes 4 servings
