CHICKEN CROQUETTES
1 cup cooked chicken breast
1 tbsp chopped fresh parsley
1 tsp thyme
salt, ground black pepper, and cayenne pepper to taste
1 cup prepared white sauce (or as needed for a firm mixture)
flour
2 eggs, beaten
2 cups bread crumbs
1/4 cup cooking oil
Combine chicken, thyme, parsley, salt and pepper.
Add white sauce but keep mixture firm. Set aside in refrigerator for 1-4 hours.
TO SHAPE AND COOK:
Place flour, beaten egg, and bread crumbs in separate shallow bowls; set aside.
Form chicken mixture into patties and coat with flour. Dip in eggs, then coat with bread crumbs
Heat oil in a skillet.
Fry croquettes in oil until both sides are golden brown.
