Chicken and Fruit Salad (Ensalada de Pollo y Frutas)
2 1/2 cups of cooked chicken, cut in small bite size chunks
3/4 cup chopped celery
1 cup chopped walnuts
1 med can fruit cocktail, well drained
1 cup mayonnaise
1 large cream cheese
1/2 tsp salt
Juice of 1 lemon
1 apple, peeled and diced
1 can whole asparagus for garnishing
Soften the cream cheese by leaving at room temperature for a while. Squash with fork. Add all ingredients except for the fruit cocktail. Mix well. Add the fruit cocktail and mix without breaking the fruit pieces. Garnish with asparagus spears, cover and refrigerate.
Serves 6-8
