Recipe(tried): Chicken Enchiladas Variation

I made on Tues rather than Monday and I muct add that I used the LEMON chicken like I said that was leftover, I will tell you this is a must do for this recipe!! it added such a good flavor!!
I would think just any ol chicken braised with lemon would add flavor. Imgoing to do again and again and again!!
Of course I didn't measure acuratly like Rhonda but it was ggod just the same!
Oh can you believe that our large Kroger store did not have canned enchalada sauce????? fortunatly their brand cheese was on sale and had a coupon for for i free packet of mexican seasoning, and it was fine ... the midwest!
