Recipe: Chicken in the Pink (using catsup, orange juice, cranberry sauce)

Here s another untried recipe. Sounds good though!

Chicken in the Pink
Servings: 6

1 can whole cranberry sauce
1 Tablespoon minced onion
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic salt
3 Tablespoons salad oil
8 oz. can tomato sauce
2 Tablespoons tomato catsup
1/4 cup orange juice
2 broiler-fryer chickens, cut up and skinned (split breasts in two)

Preheat oven to 400 degrees F.

Mix together all ingredients but chicken in a saucepan. Place over medium heat to melt cranberry sauce.

Cover a 13 x 9 pan with foil. (Recipe doesn t say this, but I would spray foil with non-stick cooking spray) Lay chicken on foil. Pour cranberry mixture evenly over chicken parts.

Bake in a 400 degree F. oven for 45 minutes or until fork tender.
