Recipe: Chicken L'Orange (using fresh oranges, brown sugar, and ginger)

CHICKEN L'ORANGE

1 broiler-fryer chicken, cut in pieces
Salt
Paprika
4 tablespoons butter or margarine
3 oranges
2 tablespoons slivered orange rind
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon brown sugar
1/4 teaspoon ground ginger

Sprinkle chicken pieces lightly with salt and paprika; brown in butter in skillet.

While chicken is browning, juice oranges and add water to make 1 1/2 cups. Sliver rind to make 2 tablespoons. Reserve juice and rind.

Remove chicken from pan; set aside. Add reimagining ingredients to drippings in pan; stir to a smooth paste. Add reserved orange juice mixture and rind; cook, stirring constantly, until mixture thickens and comes to a boil.

Add chicken pieces. Cover; simmer over low heat until chicken is tender, about 45 minutes.

Makes 4 to 6 servings
