I have the cookbook you mentioned. However, the recipe for Chicken Parmesan is different. This cookbook was published in 1962. The name of the book is "Our Favorite Meats--Favorite recipes from Home Economics Teachers".
Chicken Parmesan
1 Pkg.Saltine Crackers, Crushed
3/4 C grated parmesan Cheese
6 chicken breast halves, or 12 thighs
1 stick butter, melted
Mis cracker crumbs and parmesan cheese. Dip chicken pieces in melted butter; roll in cracker mixture to coat chicken. Place chicken in baking dish; bake, uncovered at 325-350 for 1 hour.
