Recipe: Chicken Pot Pie

Chicken Pot Pie

This is our favorite chicken pot pie. It's pretty simple, too.

1 (10 oz. pkg.) frozen peas and carrots
1/3 cup margarine or butter
1/3 cup flour
1/3 cup chopped onion (optional)
1/2 teaspoon salt
1/4 teaspoon pepper
1-3/4 cup chicken broth (I use Campbell's canned) plus water to make measurement.
2/3 cup milk
2-1/2 to 3 cups cubed cooked chicken
Pie crust for 9x9x2 baking dish (any good pie crust recipe will do)

Rinse frozen vegetables under cold water to separate.
Heat margarine in saucepan over low heat until melted
Stir in flour, onion, salt and pepper.
Cook, stirring constantly, until mixture is bubbly; remove from heat.
Stir in broth and milk.
Heat to boiling and stir 1 minute.
Stir in chicken and vegetables.
Pour into pie crust lined dish.
Top with pie crust.
Slash top.
Bake at 425 degrees for 35 minutes or until golden brown.
