Recipe: Chicken salad Pie - 3 recipes for Jane

Hi Jane :-) The first recipe is a repost from this site. I found the other two recipes on the internet. I have not tried any of them but I think that the 3rd recipe is maybe the one you are lookibg for. I hope one of them is.

Chicken Salad Pie

2 cups cooked, diced chicken ( 3 boneless breast)
1 1/2 cup chopped celery
1 green onion, top included chopped
1/2 cup sharp cheese, shredded
1/3 cup chopped pecans
1 cup crushed Lay's potato chips
1 cooked pie crust
1 cup mayonnaise (Hellmann s)
1 Tbsp. lemon juice
salt & pepper to taste

Mix chicken, celery, onions, cheese, pecans and potato chips. Combine mayonnaise, lemon juice, salt and pepper. Mix with the chicken mixture and put in the cooked pie shell. Bake 350 for 25 minutes.

Chicken Salad Pie
Serves 6

1 unbaked pie shell (9in.)
2/3 cup low-fat cheddar cheese (divided)
1 cup lite sour cream
2/3 cup lite mayonnaise (or use fat-free)
1 1/2 cup cooked chicken
1 cup pineapple tidbits, drained
1/2 cup toasted slivered almonds
1/2 cup chopped celery
1/2 cup seedless green grapes sliced in half (opt)

Prick the bottom and sides of pie shell several times with a fork. Press 1/2 the cheese into the bottom of shell. Bake at 350F about 10 mins or till lightly browned. Cool on a wire rack.

Meanwhile combine sour cream and mayonnaise in a bowl. Stir in chicken, pineapple, almonds, celery, and sliced grapes. Pour into cooled crust. Sprinkle rest of cheese over this. Refrigerate at least 1 hour before serving.

Chicken Salad Pie

1 (9-inch) baked pie shell
1 1/2 Cups cooked, chopped chicken
1 Cup pineapple, cut in small pieces
1 Cup chopped pecans
1/2 Cup chopped celery
8 oz. Sour cream
2/3 Cup mayonnaise

Sprinkle grated cheese over crust while hot. Cool. Mix chopped chicken, pineapple, pecans and celery. Stir. Mix 2/3 of sour cream and mayonnaise with chicken mixture and pour into crust. Spread top with remainder of sour cream and mayonnaise mixture over chicken salad pie. Sprinkle top with chopped nuts. Refrigerate.
