Recipe(tried): Chicken Salad with Curry, Grapes, and Walnuts, Chicken Salad with Pineapple, Grapes, and Pecans, Chicken Salad with Swiss Cheese, Raisins, and Nuts
Salads - Main Dish Hi Susan...I found several chicken salad recipes, basically the same but, not alot of spices in them. The first one is the one I like and have made. Hope this will help. Sandy
CHICKEN SALAD DELUXE
4 boneless chicken breasts
3 tbsp. mayonnaise or to taste
2 to 3 tsp. curry powder or to taste
1 ounce coarsely chopped walnuts
Green seedless grapes
Bake chicken breasts at 350 F. for 45 minutes and allow to cool. Cut chicken into bite-size pieces and put in a large bowl. Add mayo and curry powder. (More mayo and curry powder may be added for desired consistency and taste.
Add walnuts and sliced grapes (cut these in half). Mix well, using wooden spoon. Serve cold. (4 servings)
CHICKEN SALAD
3 cups cooked cubed chicken
1 cup drained pineapple tidbits
1 cup seedless small green grapes
1/2 cup chopped pecans
1 cup finely chopped celery
1 cup mayonnaise
1/2 cup frozen whipped topping, thawed
Mix all ingredients together well in a large bowl. Chill several hours. Serve cold on lettuce leaves.
SUMMER CHICKEN SALAD
4 chicken breasts, cooked and diced in bite-sized chunks
4 green onions, chopped (including green tops)
2 ribs celery, chopped
2 slices Swiss cheese, diced
2 tbsp. raisins
2 tbsp. cashews or any other kind of nuts
2 tbsp. lemon juice
1/2 cup mayonnaise or more to taste
Salt and pepper to taste
Combine all ingredients in a large bowl and stir until well mixed. Additional mayonnaise can be added as desired. Serve in lettuce cups garnished with tomato wedges.
Serves 4-6 Note: 1 tsp. curry powder added to the mayonnaise makes a nice flavor change.
