This salad is really quite easy to do - you can either get a rotisserie chicken from the store and cut up the chicken into cubes. I prefer all boneless breast of chicken poached in some chicken broth just until done. You can use water, too, but add some seasonings, like thyme, sage, chicken seasonings if you use water.
Wait until the chicken breasts have cooled then cut up into cubes (depending on how much salad you want that's how many breasts you would use - I'd start with 2 good sized ones)
Then dice two or three medium stalks of celery. Mince some fresh parsley or use a tablespoon of dried parsley. Add 1/4 to 1/2 tsp. dried dill.
Use either red or green grapes (make sure they're seedless) and cut them in half - I'd use a couple of good clumps. For the nuts, you can use walnuts, but macedamia nuts are also good with this salad.
That's pretty much it for the way I make it. As a dressing, I use mayonnaise but thinned a bit with some orange juice or pineapple juice. Salt and pepper to taste.
