Recipe: Chickpea Patties

Chickpea patties

1 1/2 cup chickpeas
1 large onion, grated
a few parsley sprigs
a few mint sprigs
1 slice day-old bread soaked and wrung
1/2 cup flour, plus enough flour to roll patties for frying
salt & pepper
oil for frying

Soak chickpeas overnight. In the morning boil chickpeas until tender (do not overboil). Drain well and put through food grinder or sieve discarding outer skin. Mix with remaining ingredients. Take teaspoons of mixture, for into patties, roll in flour and fry in hot oil. Brown on both sides and remove with slotted spoon onto paper towel to absorb excess oil.
