Asparagus with sesame

500 gr green asparagus
1 tbsp butter
4 spring onions, finely chopped
1/2 tsp lemon skin, grated
1 tbsp lemon juice
1 tbsp sesame, slightly roasted
salt
black pepper, freshly ground
Peel and rinse the asparagus under running water. Remove the hard part of the stem and slice the asparagus into small pieces. Place the pieces in a pot with salted water. Boil for 8-10 minutes until they turn quite tender. Pick a large, heavy bottomed frying pan, heat the butter to melt and add the spring onions. Stir-fry for one minute and then add the juice, the grated lemon rind and asparagus pieces. Gently stir-fry the asparagus for three more minutes before you add the salt and pepper.
When done, place the asparagus in a warm dish and sprinkle with ample sesame.
