CHILDREN'S CANNOLI
1 (15 oz.) container part skim ricotta cheese, drained*
2/3 cup confectioners' sugar
1/2 tsp. grated orange peel
1/2 tsp. vanilla extract
2 tbsp. miniature semi-sweet chocolate chips
10 sugar ice cream cones
In a large bowl with electric mixer at low, beat ricotta cheese, sugar, orange peel, and vanilla just until smooth.
Stir in chocolate chips. Cover and refrigerate 30 minutes.
TO SERVE:
Spoon mixture directly into ice cream cones.
*To drain ricotta, place in a strainer and set over a bowl. Refrigerate overnight or until well drained.
This isn't a strawberry filling but I hope it's close to the recipe you're looking for Thomas! I think any cannoli filling should work fine. You could add chopped fresh strawberries or maybe experiment with stirring in strawberry puree. I hope someone has the exact recipe to share.
