Recipe(tried): Chile Ginger Jam

We enjoy -

CHILE GINGER JAM

1 onion, finely chopped
2 garlic cloves, crushed
1 tablespoon sunflower oil
3 red chillies, finely chopped
1 tablespoon grated ginger
1 lime, juiced
rind and juice of one orange (I omit this)
3 tablespoons honey
1 tablespoon malt vinegar
2 tablespoons ketchup

Fry onion and garlic in oil. Add chillies, ginger, lime juice, orange juice (if using), honey, vinegar, and ketchup. Gently boil 2 minutes. Cool

I use English tablespoons.

We enjoy this - but as you say it only uses a few chillies. Alas my chilli bush is done for...
