CHILEHEAD'S MARGARITA SEAFOOD MARINADE
1/4 cup vegetable oil
3 tablespoons tequila
3 tablespoons lime juice
2 tablespoons triple sec
2 to 3 jalapeno chiles, stems and seeds removed, minced
2 teaspoons grated lime peel
Combine all ingredients in non-reactive bowl. Marinate seafood (i.e., shrimp and scallops) at least 30 minutes. Cook as desired.
Also use marinade for basting during grilling. To use marinade at the table, bring remaining marinade to a boil; serve with seafood (kabobs).
