Recipe: Chilled Cucumber Soup (blender)

CHILLED CUCUMBER SOUP

2 large cucumbers, peeled and coarsely chopped, divided use
1 1/2 cups chicken broth
1 1/2 cups plain yogurt
2 tablespoons sour cream
2 teaspoons dried dill
1/2 cup thinly sliced green onions

Put one chopped cucumber in a blender. Add the broth, yogurt, sour cream and dill. Blend for 20 seconds.

Pour the mixture into a serving bowl. Stir the remaining chopped cucumber and the green onions into the soup. Chill for 2 hours.

VARIATION:
You can make a sweeter version of this soup with mint. Follow the same process, but omit the dill and add 1/3 cup fresh mint to the blender instead.

Makes 6 servings
