Ok, I am going to be a good "egg" today to type out all the salad dressings I know... Gosh, I hope it will kill the heat in your area somehow...

Chinese Basic Salad Dressings, serve 2 - 3
3/4 t. each : salt, sugar
2 T. vinegar or lemon juice (If use vinegar, choose apple cider vinegar or rice vinegar for best result.)
dash of black pepper
6 T. oil
Add everything to 6 T. oil; stir until mixed well. DONE!
Variations:
1. Garlic & onion Salad Dressing
Add together 1 t. garlic powder and 3 T. minced onion to 1/2 cup basic salad dressing; stir until mixed well.
2. Soy Sauce Salad Dressing
Add together 1 T. of soy sauce and 1 T. minced green onion (I think it's called shallots in the US?) to 1/2 cup of basic salad dressing; stir until mixed well.
3. Plum Salad Dressing
Add together 1 T. mashed, salted sour plum to 1/2 cup basic salad dressing; stir until mixed well.
4. Celery & Coriander Salad Dressing
Add together 1 T. minced coriander and 2 T. minced celery to 1/2 cup basic salad dressing; stir until mixed well.
5. Mixed Salad Dressing (MY PERSONAL CHOICE.)
Add together 3 T. chopped and peeled tomato, one cooked and diced egg; 1 T. each of minced green pepper, onion, and celery to 1/2 cup of basic salad dressing; stir until mixed well.
6. Mashed Garlic & Mustard Salad Dressing
Add together 1/2 T. mashed garlic, 3/4 t. mustard, and 1 1/2 T. minced onion to 1/2 cup basic salad dressing; stir until mixed well.
7. Cucumber Salad Dressing
Grind one cucumber with a grinder. Add together cucumber, 1/2 t. mustard and 1 t. minced onion to 1/2 cup of basic salad dressing; stir until mixed well.
If grinder is not available, use a blender.
8. Honey Salad Dressing
Mix together 6 T. honey, 2 T. vinegar, 2 T. water and 1/6 t. salt; stir until mixed. (This is not a Variation from the "basic salad dressing.) Use this for fruits instead.
