Recipe(tried): Chinese Chews.....

Dear Christa , This recipe is not the one from James Beard, but from a
book called " The Charleston Cake Lady " . I'm from Charleston, S.C. and
we used to make these all the time. They were very popular there when I was
growing up. I hope this will help to lighten your days !

Chinese Chews
4 large eggs
1 pound dark brown sugar
2 1/2 cups self-rising flour,sifted
1 tsp. vanilla extract
1 cup chopped walnuts or pecans
sifted confectioners' sugar for dusting tops

Preheat oven to 350 F. Grease a 9" x 13" pan.
In a large bowl , mix the eggs, brown sugar, flour and vanilla extract until
well blended. Fold in the chopped nuts.
Pour the batter into the prepared pan. Bake for 25 minutes or until golden
brown on top. Sprinkle the chews with sifted confectioners' sugar ( also known
as icing sugar ).
Cut into squares when cooled. Enjoy!
