Recipe: Fiesta Corn (using cornmeal, Cheddar, and chiles)

FIESTA CORN

2 eggs
1 cup yellow cornmeal
1 (1 pound, 1 ounce) can cream-style corn
1/4 cup milk
1/3 cup margarine, melted
1/2 teaspoon baking soda
1 teaspoon salt
1/2 pound shredded Cheddar cheese
1 (4 ounce) can green chilies (or 1/2 green bell pepper, slivered and par-cooked 3 minutes)

Preheat oven to 350 degrees F. Grease a 6-cup casserole with oil or margarine.

Beat the eggs lightly in a medium-size bowl; stir in the cornmeal. Add the corn, milk, margarine, baking soda and salt. Place half the corn mixture in the prepared casserole. Add half the cheese and the chilies, cut into chunks, or the green pepper. Add remaining corn mixture and top with remaining cheese.

Bake in moderate (350 degrees F) oven for 45 minutes or until set. (The time depends on the shape of the casserole.) Cut into wedges or spoon cut.
