Recipe: CHINESE FOOD - quick and easy
Misc.Three-cup Red-cooked Chicken
1/2 chicken
4 Tablespoons sesme oil
12 slices ginger root
3 dried hot red pepper
Sauce: Mix together
1/4 cup soy sauce
1/4 cup cooking wine
1 Tablespoon sugar
1/2 cup water
1 small package (2 or 2 1/2 ozs) Transparent (dried) Mung bean threads soaked in warm water to soften.
Wash chicken and cut it into pieces. Heat wok, add sesame oil. Stir fry ginger root, add dried red pepper fry until fragrant (Do not burn the peppers. Take out ginger at this point. Add chicken and stir fry 3 minutes. Remove any oil left in wok. Add sauce to chicken and simmer 30 minutes. Drain bean threads and add to chicken and cook 3 minutes or until the sauce left has almost evaporated.
Serve with rice or
Take one package Ramen noodles. Boil 3 minutes, drain
In small fry pan, form a cake of noodles, fry one side until crisp.
Turn and fry the other side. The center of the noodles being soft.
