Hi Kate - I think this is the one you're looking for - the recipe says to discard the seasoning packet. I used to make this all the time, but kind of forgot about it. It's always been a big hit and people like it. This recipe says to use sesame seeds, but I've used other seeds, like sunflower seeds in place of them - not a problem.
CHINESE NOODLE SALAD
FOR THE DRESSING:
1 cup vegetable oil
3 tablespoons soy sauce
1 cup sugar
1/2 cup white vinegar
FOR THE SALAD:
1 head Bok Choy or Napa cabbage
12 green onions, chopped
1/2 cup sesame seeds
1/2 cup margarine
2 packages Raman noodles (discard seasoning packet)
1 small package sliced almonds
TO PREPARE THE DRESSING:
In a covered jar, add all the dressing ingredients, shake well and set aside in refrigerator.
TO PREPARE THE SALAD:
Discard the outer coarse leafs from cabbage and chop the inner ribs fine. Remove the older tips of the green onions, then chop onions fine, using greens, also. Set aside in refrigerator to chill.
Brown the sesame seeds briefly in a dry frying pan and set aside.
Break up the dry noodles into smaller pieces. Saute the noodle pieces, almonds and browned sesame seeds in the margarine. Keep stirring as you saut as it can get too brown or burn quickly. Then cool noodle mixture before mixing it with the chilled cabbage and onions. Return all to the refrigerator.
TO SERVE:
Dress the salad only 20 minutes before serving or it will be soggy. Toss well.
Serves 10-12.
