Chocolate Chip Pecan Mounds

Yield: 5 dozen
1 cup butter or margarine
1 cup packed brown sugar
1 egg yolk
1 tsp vanilla extract
2 cups all purpose flour
1 6 oz package (1 cup) semi-sweet chocolate pieces
(OR minature semi-sweet chocolate pieces)
2 slightly-beaten egg whites
2 cups finely chopped pecans
Preheat oven to 350 degrees F
In a large mixing bowl beat butter or margarine until softened. Add brown sugar and beat till fluffy. Add egg yolk and vanilla, beat well. Add flour and beat until well blended. Stir in chocolate pieces, cover and chill for about an hour or until easy to handle. Shape into 1" balls, roll in egg whites then in nuts. Place on a lightly greased cookie sheet and bake about 15 minutes or until done (centers will still be soft). Remove and cool.
