Recipe: Banana Walnut Cookies (Quaker Oats recipe)

BANANA WALNUT COOKIES

1 1/2 cups sifted all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 1/2 tsp ground cinnamon
1 cup brown sugar, firmly packed
2/3 cup vegetable shortening
1 egg
1/4 cup milk
1 cup mashed bananas
2 cups Quaker Oats, uncooked (quick or old-fashioned)
1/2 cup chopped walnuts

Sift together flour, baking powder, baking soda, salt and cinnamon into bowl. Add brown sugar, shortening, egg, milk and bananas. Beat until smooth, about 2 minutes.

Stir in oats and walnuts. Drop by teaspoonfuls onto greased cookie sheets.

Bake in preheated moderate oven (375 degrees F) 12 to 15 minutes.

Makes 5 dozen cookies
