Recipe: Chocolate Covered Cherries

2 1/2 cups confectioners sugar
1/4 cup butter or margarine, softened
1 Tbls milk
1/2 tsp almond extract
2 (8 oz) jars maraschino cherries with stems*, juice drained in colander
2 cups semisweet chocolate chips
2 Tbls regular Crisco shortening
In mixing bowl, combine sugar, butter, milk, and extract; mix well. Knead into large ball. Pinch off enough to make a 1" ball and flatten each into a 2 inch circle. Put cherry in center and wrap to cover. Place with stem up on a waxed paper lined baking sheet. Cover with plastic wrap and refrigerate 4 hours or over night. Melt chocolate chips and shortening in a double-boiler or microwave-safe bowl. Holding stem, dip cherries into chocolate; and put on waxed paper to harden. Store in a covered container. Make and refrigerate 1-2 weeks before serving. The longer the candies sit the juicier the center will be.
*Use the "Best" cherries you can get, you will have more liquid in center of candies.
