Recipe: Chocolate Drop Cookies (2 recipes, using nuts and shortening)

1 3/4 cups flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 cup brown sugar
1/2 cup shortening
1 egg
2 squares (1 oz. each) unsweetened baking chocolate, melted
1/2 cup milk
1/2 tsp. vanilla (add to milk)
1/2 cup chopped nuts
Preheat oven to 400 degrees F. Lightly grease a cookie sheet.
Sift together flour, baking powder, baking soda, and salt; set aside.
Mix sugar, shortening, and egg together; beat until well creamed. Add melted chocolate; beat.
Add dry ingredients alternately with milk and vanilla. Beat long enough to form a soft dough. Stir in nuts. Drop from teaspoon onto prepared cookie sheet.
Bake at 400 degrees F for 10 to 12 minutes.
CHOCOLATE DROP COOKIES
1/2 shortening (may use part butter)
1 cup sugar
1 egg
3/4 cup milk
1 tsp. vanilla
1 3/4 cups flour
1/2 cup unsweetened cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup chopped nuts
Mix shortening, sugar, and egg together thoroughly. Stir in milk and vanilla; set aside.
Sift dry ingredients together and add to first mixture, stirring. Add nuts. Chill for 1 hour.
Preheat oven to 400 degrees F. Lightly grease a cookie sheet.
Drop mixture onto prepared cookie sheet, using a teaspoon.
Bake for 8 to 10 minutes. Cool. Frost with chocolate icing if desired.
