Recipe: Chocolate Muffins with White Chocolate Chips and Pecans

CHOCOLATE MUFFINS

2 cups flour
1 tablespoon baking powder
Pinch salt
1/2 cup brown sugar
1/2 cup pecans, chopped
2 eggs
2/3 cups milk
1/3 cup butter, melted
3 1/2 ounces semi-sweet baking chocolate, melted
1 teaspoon vanilla
1/2 to 3/4 cup white chocolate chips

Heat oven to 400 degrees F. Grease 12 muffin pan cups or line with paper liners.

Sift flour, baking powder and salt into a bowl. Add brown sugar and pecans.

In another bowl, combine eggs, milk, butter, chocolate and vanilla. Stir dry mixture into wet mixture. Do not overmix. Lightly stir in white chocolate chips. Spoon batter into prepared muffin cups.

Bake for about 15 to 20 minutes, or until a cake tester inserted in the center comes out clean. Set pan on a rack to cool for five minutes. Remove muffins from pans and cool on rack. Serve warm or cold.
