CHOCOLATE NUT LOG CANDY
1 oz. unsweetened chocolate, finely chopped
(can use 2 oz for a darker fudge)
3/4 cup milk
1 1/3 cups sugar
1 Tbsp. light corn syrup
1/4 tsp. salt
2 Tbsp. butter
1 tsp. vanilla
1/2 cup chopped pecans
Heat milk and chocolate until warm and melted.
Stir in sugar, corn syrup, and salt. Cook over medium and bring to a boil, stirring just until sugar dissolves. Reduce heat to medium-low. Cover 2 minutes to dissolve sugar crystals. Remove lid and cook over medium-low, without stirring, to 236-238 degrees.
Remove from heat. Add butter without stirring. Cool to lukewarm (110 degrees). It should take about an hour.
In the meantime, butter a baking sheet.
When lukewarm, add vanilla. Beat by hand until it begins to thicken and hold shape (a cheese-like mass).
Stir in nuts. Pour into sheet and let cool another 20-30 minutes, until it can be kneaded without sticking to your hands.
Knead until creamy, about 5 minutes. Do not knead too long, or it will become too soft.
Shape into two 1 1/2-inch diameter logs. Wrap tightly. Store in a cool, dry place or in the refrigerator.
Cut into thin slices.
