TURKEY MARSALA
4 turkey breast tenderloin steaks (about 1 pound total)
2 cloves garlic, minced
FOR THE SAUCE:
1/2 cup reduced sodium chicken broth
1/4 cup marsala wine
1 tablespoon lemon juice
1/2 teaspoon salt-free seasoning blend
1/8 teaspoon pepper
2 tablespoons snipped fresh parsley
TO SERVE:
steamed carrots and zucchini (optional)
grapes (optional)
TO PREPARE THE TURKEY:
Rinse turkey; pat dry with paper towels. Spray an unheated large skillet with nonstick spray coating. Cook turkey steaks with garlic in skillet over medium heat for 3 to 4 minutes on each side or till turkey is tender and no longer pink. Transfer to a serving platter; cover and keep warm.
TO PREPARE THE SAUCE:
In same skillet stir together broth, wine, lemon juice, seasoning blend and pepper. Bring to boiling; boil gently, uncovered, about 4 minutes or until reduced to 1/4 cup liquid. Stir in parsley.
TO SERVE:
Spoon sauce over turkey. If desired, serve over thinly sliced steamed carrots and zucchini and garnish with grapes.
