Recipe: Christmas Salad (Jell-O)

This is from an old, local cookbook "What's Cookin' in Eagle Bay". I've never made it, but anything I've ever made from this book works!

Use an 8x14 dish.

1st layer: 1 pkg lime jello, 2 cups boiling water, 1 can pineapple chunks (drained). Mix and chill until firm.

2nd layer: 1 envelope plain gelatin dissolved in 1 cup hot pineapple juice, 1/4 cup mayonnaise, 8oz. pkg firm-style cream cheese, 1/4 cup whipping cream, whipped. Mix and pour over set green mixture. Chill.

3rd layer: 1 pkg raspberry jello, 2 cups boiling water. Mix and when cool pour over the set cheese mixture.

This cuts into squares and is very good to serve on a lettuce leaf for a light lunch.
